Start with the antipasti: Zucchini carpaccio with toasted almonds and parmigano reggiano, char grilled asparagus with poached egg and Pantelleria capers, octopus salad with artichokes, Air dried beef with frise salad, buffalo mozzarella wrapped in grilled aubergine, and green asparagus and spinach soup with crema di Pecorino.

Follow these sensational dishes with either char grilled tuna with Amalfi salad, fillet of plaice with basil crust, Prawns and King Scallops with pancetta, rib eye steak with balsamic onions, veal escalope with Parma ham and Marsala sauce, grilled rump of lamb with rustic potatoes and Membrillo aioli, or Spatchcock chicken with pickled lemon.
